Paleo:: The BEST Chili Ever!

It’s starting to get cold in Houston and by cold I mean that we could wear our boots and scarfs for about 3 days in a row in 60 degree weather! We take what we can get around here and cram fall into those few cool days.
So, what do you cook in cold weather? The BEST Chili EVER, that’s what!
This chili is hands down my 2 little ones favorite dish to eat. They actually ask for this by name. Chilwee mama!
This chili recipe is super easy to make and is about as clean eating as you can get. I make a huge pot of it and we eat on leftovers through out the week. I am always up for a meat that makes more than we need to make the week run more smoothly!
Ingredients:
2 lbs. of grass fed ground beef
1 large zucchini
1 medium sized sweet onion
1 tablespoon of coconut oil
1 large can of crushed tomatoes
1 small can of tomato paste
(when buying your canned tomatoes check the ingredients and make sure you are ONLY getting tomatoes and that there are not any “added” ingredients)
1 small can of water
3-4 tablespoons of chili powder
1 tablespoon of granulated garlic
1-2 tablespoons of paprika
3 teaspoons of salt
 Get all of your ingredients together and chop up your veggies. I even have a trash bowl sitting by so I am not running back and forth to throw wrapping and cans away.
Let your coconut oil melt down on medium heat and add your onion. Once the onion is cooking down season with a dash of your salt and a pinch of your chili powder. *The secret to this recipe is to season as you go. Each layer needs a little bit of something!
After your onions are softened. Add your ground beef and start sautéing that with your onions. Add a tablespoon of chili powder and paprika and a teaspoon of salt. Once your beef is fully cooked add your zucchini and let sit on medium heat for a couple of minutes.
Next, add your canned tomatoes and 1 small can of water. Then add the rest of your seasoning and stir in well. Now the hard part. You have to wait and let this awesomeness cook down for at least 1-2 hours. The longer it cooks the better it tastes!
You will see as you cook it down the liquid will thicken and look more like a traditional chili. Now plate it up and enjoy!

This chili will take you about 15 minutes of prep time but a bit longer to cook. It is awesome for “colder” weather and is super good for you! This recipe is Whole 30 approved and 100% Paleo! And it’s delicious!
